Pasta Puttanesca from Jojo’s Part 4

Goooood morning! It’s a lovely day in my part of the world. Today I’m making pasta puttanesca! I first heard about this type of pasta from A Series of Unfortunate Events, where Count Olaf forces the Baudelaire siblings to make dinner for his theater group, and they end up making pasta puttanesca because the ingredients are cheap and they hadn’t got a lot of money. I LOVED that book series as a child, so, when I saw this recipe in Jojo’s, I thought that I had to give it a try.

Let me just tell you, this recipe is really good. Honestly, it’s quite simple to make and results in a tasty and delicious pasta. Also, the ingredients are fairly cheap, so it shouldn’t break the bank. Funnily enough, this type of pasta actually originated for its cheapness. Prostitutes in Italy used to make it because the ingredients were cheap and  it smelled so good. Apparently, they would set it out on windowsills to draw in male customers.  I made a whole recipe’s worth for myself and have been eating it all week long, so it’s a great meal that will last you for the week. Read on below for a full recipe with measurements and things.

Ingredients (for 4-6 servings)

  1. 1 pound Spaghetti

  2. 1 28 oz can of  tomatoes, preferably special cut, not whole.

  3. 2 Anchovy fillets

  4. 4 cloves garlic, chopped finely

  5. Hot pepper flakes

  6. 1 cup Kalamata olives, halved

  7. 1/4 cup olive oil

  8. Salt and pepper

  9. Parmesan Cheese for garnish

  10. Parsley flakes OR fresh chopped parsley for garnish

 

Making de Pasta

Ooook, begin by putting a pot of water on to boil for the pasta. Then, chop your garlic (I chose to grate mine), start heating the oil over medium heat, and while that is warming up, halve your olives.

Once your oil is hot, pop your anchovy fillets down and let them brown up along with a good 2 shakes of the hot pepper flakes. If you don’t like spicy things, you can use less or none, but if you do like spice, feel free to put as much in as you like.

Break them up with a spatula, and then add in the garlic. Let it cook for about 1 minute, but don’t let the garlic burn! It’ll burn in the blink of an eye. I almost let mine burn. As you can see, the garlic is quite brown.

Then, pour in your tomatoes, and break them up into pieces with your spatula, if you got whole tomatoes. You want it to be a saucy texture, with maybe a few pieces of tomato. Throw in the olives, a few grates of pepper, and give everything a good stir. Taste your sauce, and adjust flavors accordingly. I ended up adding a small spoonful of sugar to mine to adjust the sauce to my preference.

In the meantime, once your water boils, salt the water to impart flavor on the pasta, and then add in your spaghetti and cook to the instructions on the package.

You’ll know the pasta is done when the inside has just the smallest pin prick of white.

Once the pasta is done, drain it and dish out your servings. Spoon sauce on the top and sprinkle with Parmesan and parsley.
